This Tomato Chickpea Salad is a quick, easy, and light weeknight meal. Packed with fresh ingredients and a zesty dressing, it's the perfect dish for a healthy dinner option or a side salad.
Ingredients:
- 2 cups cherry tomatoes, halved
- 1 can 15 oz chickpeas, drained and rinsed
- 1/2 red onion, finely chopped
- 1/2 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Feta cheese crumbles optional, for garnish
Instructions:
Put the chickpeas, red onion, cucumber, parsley, and cherry tomatoes in a large bowl
Add the olive oil and lemon juice to a different small bowl and mix them together using a whisk
Add the dressing to the salad and mix it around so that everything is covered
Add pepper and salt to taste
If you want, you can add crumbled feta cheese on top to make it taste even better
Put it in the fridge for 30 minutes before serving so that the flavors can mix
